如何保持健康-03

牛奶均为变质物

市面上销售de牛奶和油yi样容易被氧化。

在加工之前de生牛奶中确实含有很多有益成分,有分解乳糖等碳水化合物de酶、分解脂肪de脂肪酶、分解蛋白质de蛋白酶等等各种各样对人体有利de酶。还有维他命B2,它具有抗氧化、抗炎症、抗病毒和调节体内免疫能力等积极作用。

但shi在市面上销售de牛奶当中,这些有益成分已经全部消失了。

市面上销售de牛奶de制作过程大概shi这样de,先把牛de乳头牵引过来用机器榨取乳汁,然后储存在yi个容器当中。然后把从各个农家收集来de生牛奶统yi装进大罐子,再平均分配各种营养成分和生牛奶中所含de脂肪颗粒。

在生牛奶当中有1/4shi脂肪并且都以被叫做“脂肪球”de颗粒状存在。由于脂肪球漂浮在最上面,所以将生牛奶搁置yi段时间之后,就会在上面形成yi层奶油脂肪层。在我小de时候,我喝de都shi瓶装牛奶,在打开纸盖子之后经常能够发现,盖子de里面黏满了乳白色de奶油小颗粒,这shi因为牛奶de成分还没有被平均化,而在搬运de过程中脂肪球漂浮上来了。

现在为了防止这种情况,专门使用搅拌机将脂肪球弄碎,制成de牛奶叫做精牛奶。但shi在经过yi系列加工之后,使牛奶中de脂肪和氧气发生反应形成过了氧化脂,就shi已经被氧化de脂肪,换句话说就shi已经变质de脂肪。过氧化脂对人体de伤害在前面我们已经讲过了。

然而牛奶de加工过程还没有结束,被提取精化de牛奶还要经过yi系列高温杀菌,牛奶de高温杀菌大概有以下四种方法:

1.低温杀菌法(LTLT)——62℃~65℃加热30分钟杀毒。

2.高温杀菌法(HTLT)——75℃以上加热15分钟杀毒。

3.高温短时杀菌法(HTST)——72℃以上加热15秒杀菌,这shi世界上普遍采用de杀菌方法。

4.超高温短时杀菌法(UHT)——120℃~130℃加热两秒(150℃加热yi秒)杀菌。

世界上普遍采用de杀菌方法shi高温短时杀菌法,而日本则采用超高温短时杀菌法。前面我们已经说过很多次了,酶很怕热,在48℃~115℃就会失去活性,所以即使在很短de时间内,酶在130℃de高温下已经完全失去活性了。

而且,在超高温条件下,会使过氧化脂大量增加,更重要deshi,蛋白质加热后容易变质,所以鸡蛋在长时间煮过之后蛋黄会出现坑凹状。牛奶中de蛋白质也shiyi样,并且维他命B2在高温条件下也会失去活性。

所以在日本市面上销售de牛奶不利于人体健康。

牛奶只宜哺育小牛

其实,牛奶shi给小牛喝de。它de成分都shi有利于小牛成长de,但shi并不等于就有利于人类de成长。

首先,看yi看自然界我们就明白了,在动物当中凡shi喝奶de都shi刚生下来不久de“小孩”。

而且没有yi种在长大“成人”之后还在喝奶de动物,这shi自然规律。只有我们人类把别de生物de奶拿来氧化之后自己喝,这shi不shi多少有悖于自然规律呢?

在日本,学校给学生们提供牛奶,认为牛奶营养丰富,有利于孩子们生长和发育,并且认为牛奶和人乳差不多,其实这shi个错误de认识。

确实,就所含成分来看,好像二者没有什么区别,都含有蛋白质、脂质、乳糖、铁、钙、磷、钠、钾、维他命等物质,但shi在“质”和“量”上却有着很大de差别。

牛奶中蛋白质de主要成分shi酪素,前面我们已经说过这shiyi种很难被人类肠道消化de物质。在牛奶中虽然也含有能够提高免疫力和抗氧化作用de维他命B2,但shi在人乳当中维他命B2de含量要比牛奶多很多。人乳当中de含量约0.15%,而在牛奶中de含量只有0.01%。

所以,在给小牛喝de牛奶和给婴儿喝de人乳当中,各种成分de含量shi不同de。

即使都shi“小孩子”也会有所差别,所需要de物质条件也不yi样,更何况“成人”呢。比如说,牛奶当中de维他命B2很怕胃酸,即使大人喝了没有经过加热de牛奶到了胃里也会被分解。母乳当中也shiyi样de,刚生下来de婴儿能够从母体摄取维他命B2,shi因为婴儿de胃部还没有发育成熟,还不发达,胃酸分泌不足de缘故。同样道理,人在长大之后也就不用再喝人乳了。

即使shi没有经过加工处理de鲜牛奶,人类也不宜饮用。更何况,经过高温杀菌de成品奶了。学校就把这些不利于健康de食物提供给我们最爱de孩子们。

还有yi个问题就shi,日本人体内乳糖酶de含量都严重不足,乳糖酶yi般都存在于肠道黏膜上,但shi随着年龄de增加,分泌量会越来越少。

有些人在喝过牛奶之后,肚子会咕噜咕噜地响或者会拉痢疾,这都shi因为乳糖酶分泌不足,乳糖无法被完全分解才导致牛奶不能被消化和吸收de。

这种不分泌乳糖酶或者乳糖酶严重不足de现象叫做“乳糖不耐症”。虽然完全不分泌乳糖酶de人很少,但shi在日本,乳糖酶分泌不足de人约占85%以上。

乳糖只存在于哺乳类动物de乳汁当中,本来乳汁就shi给小宝宝喝de。虽然大多数de日本人乳糖酶de分泌量都严重不足,但shi刚出生de小宝宝乳糖酶de分泌量却很充足。在人乳当中乳糖de含量为7%,而牛奶中乳糖de含量为4.5%。

人在出生之后,都需要含有乳糖de母乳喂养,但随着人长大之后乳糖酶会慢慢地减少,这就说明长大后de人们已经不需要母乳喂养了,这也符合自然规律。

如果有人确实非常喜欢喝牛奶de话,那我还shi建议他偶尔喝yi点没有加工过de鲜奶为宜。

还有不要强迫不喜欢喝牛奶de人喝牛奶,毕竟牛奶对身体健康shi有损害de。

如何保持健康-02

酸奶不宜多喝

最近,备受欢迎的“里海酸乳”和“野生芦荟酸乳”以及各种号称对健康有利的乳酸制品在市场上开始热销,但是我认为每天喝酸奶未必对身体有好处。

经常喝酸奶的人会告诉你,喝酸奶可以调节肠胃环境、治疗便秘、减肥等等。之所以能够产生这些效果大家普遍都认为是因为酸奶当中含有“乳酸菌”。如果都归功于乳酸菌那就很奇怪了。

人体当中本来就含有乳酸菌,这些细菌都被叫做中性菌,在人体当中有一套专门对付外来病毒和细菌的自身保护免疫系统。即使是作为对身体有益的乳酸菌来说,如果不属于体内中性菌的范围,也将被自身保护免疫系统所杀死。

首先行动的就是胃,在强大的胃酸作用下,大量的乳酸菌被杀死,而最近听说市场上正在销售一种可以使乳酸菌到达肠道的乳制品,但是尽管乳酸菌能够到达肠道也要与肠道中的自身保护免疫系统经过一番恶战。这些在实验室的托盘上有实现的可能性,应用到真正的人体当中就未必能实现了。因为人体的肠道可不是实验室里的托盘。

我一直都不相信酸奶具有那么神奇的功效,临床结果表明,经常喝酸奶的人肠道状况也并不怎么乐观。所以即使乳酸菌能够到达肠道,也并不能改善肠道内的环境。

为什么有那么多人认为喝酸奶有利于身体健康呢?那是因为体内缺乏能够分解乳糖的酶,乳糖是乳制品内含有的糖分,这种可以分解乳糖的酶叫做乳糖酶,它随着年龄的增加而减少,这也是很正常的事情,其实乳类只不过就是给小孩子喝的,大人就不要在跟着凑热闹了。也就是说成年人并不需要这种乳糖酶。

酸奶当中含有大量乳糖,如果由于体内乳糖酶不足,那么就会导致轻微的痢疾和消化不良。有好多人在喝了酸奶之后会患痢疾并且伴有少量的滞留便,所以被误认为是治疗便秘的好方法。

但是我认为每天喝酸奶未必对身体有好处,这是我根据诊断30万例的肠胃病患者的临床经验所得出的结论。如果你们每天喝酸奶,那么排出的便和屁就会有很强烈的味道,这说明肠道内环境恶化,并且孳生了大量毒素造成的。

就是说,在市场上宣传这些如何对身体有利、功能如何强大的食品当中,有很大一部分都不利于身体健康。

在前面我们已经讲过了,我们的健康是掌握在我们自己手里的,不要轻信那些商业广告和宣传,要根据自己身体的实际情况有选择的行动,如果盲目地听信了宣传或者亲自尝试的话,就会产生像前面举过的例子一样误认为喝酸奶可以治疗便秘。

要根据自己的实际情况来有选择的行动,经常定期的去找权威的医院做一些肠胃方面的检查,随时关注自己的身体变化和健康状况。如果要使用我的“新谷饮食健康疗法”的朋友,我建议你在使用之前先去医院做一下肠胃方面的检查,不用来我这里做也可以,目的就是希望大家能够亲身体验到使用“新谷饮食健康疗法”前后身体的明显变化。

不宜过多食用人造油

最容易被氧化的食物的代表就当属油了。油是自然界很多植物种子当中所含有的物质,比如水稻的种子糙米就含有大量的油。还有我们平常食用的一些诸如菜子油、橄榄油、芝麻油、棉籽油、玉米油、葡萄子油等,都是由人工从植物的种子里提炼出来经过加工而成的。

在以前是用榨油机将油从植物的种子当中压出来,现在基本上已经不用这种原始的方法了,因为既耗时又费力,而且时间长油也容易变质。

现在市面上销售的油是通过一种叫做“溶剂抽出法”的榨油方法制成的。这种方法的原理是,首先将原材料乙烷(化学用品)与待炼物搅拌成糊状使其充分混合,然后加热将油榨出,然后在经过高压高温加热使乙烷溶剂蒸发,最后制成成品油。虽然这种方法效果很好,并且在加热过程中油也不容易变质,但是在榨出的油当中含有一种叫做反式脂肪酸的物质对身体非常有害。

而且有报告指出,反式脂肪酸是自然界当中不存在的物质,在人体中它能够减少有益胆固醇而增加有害胆固醇,除此之外还能够引发高血压、心脏病、癌症等疾病。

在欧美各国规定了严格的销售制度,如果一旦发现产品中反式脂肪酸超标就禁止销售,遗憾的是日本到目前为止还没有这样的规定。

含有反式脂肪酸最多的就是人造油。有好多人认为,人造植物油要比动物油胆固醇的含量高,所以更有利于人体健康。这是不科学的说法。

其实危害性最大的就当属人造油了,我曾经对我的患者进行饮食健康疗法时说,如果家里有人造油,记得回去一定要扔掉。

植物油通常状态下呈现液体状态,这是因为植物油当中含有大量的不饱和脂肪酸,而动物油通常状态下呈现固体状态,是因为含有大量的饱和脂肪酸。

人造油虽然属于植物油,但是在通常状况下却容易凝固,这是因为人工添加了氧化剂使不饱和脂肪酸变成了饱和脂肪酸。作为人造油原材料的植物油本来就是含有反式脂肪酸的油类,而继续添加氧化剂之后,就成了变质的人造油。

和人造油一样含有反式脂肪酸的油类是酥油,在家庭中可能不怎么使用这种油,但是在市面上销售的各种甜点饼干还有快餐和炸薯片当中,都使用了这种酥油。

我之所以认为甜点饼干对身体不好,就是因为其含有反式脂肪酸。

如果保持健康-01

慎用所谓的流行健康法

你每天都保持着良好的饮食习惯吗?经常会留心自己的健康问题吗?我想很少有人会经常注意到自己所服用的药物以及每天的饮食情况吧?在我们日常的生活习惯当中有许多被称作对健康有利的方法,这些方法是否真的有利于健康,我建议大家还是定期做一些必要的检查以确认自己是否健康。

为什么这么说,一般情况下,那些所谓的健康活动中有相当一部分都会对我们的身体造成危害。尤其是关于饮食方面的所谓的健康法,也有很大一部分对健康不利。那么你有尝试过下面的方法吗?

▲饮用酸奶有利于肠胃;

▲牛奶可以补充钙质;

▲食用水果身体易肥胖,保健品可增加维他命;

▲食用米饭身体容易发胖;

▲多吃高蛋白和低热量的食物;

▲多喝绿茶;

▲水要烧开喝。

以上这些方法人们一般认为对健康有利,但是就从事肠胃疾病诊断医生的我来说,这些全部都是不利于肠胃的错误方法。

我从来没见过,每天喝酸奶的人有哪个肠胃是好的。在美国有一多半人每天都喝牛奶,但有好多人都患有不同程度的骨质疏松症。

每天都喝绿茶的人肠胃状况也并不好,还有许多人大量地饮用绿茶,这容易引起萎缩性胃炎,是胃癌的前期征兆。

肠胃状况不好的人,身体健康都存在着隐患。

为什么这些损害肠胃的东西却被说成是对健康有利的呢?我觉得是因为人们只看到了食品中含有一种对健康有利的物质,从而盲目地认为该食品也一定对健康有利。

就拿绿茶来举个例子吧。

绿茶当中有利的成分确实不少,具有杀菌和抗氧化的作用。所以有人说喝绿茶可以延年益寿,还可以预防癌症,但是我一直对这些说法持有疑问。根据我的临床经验每天喝茶的人肠胃状况并不好。

茶叶中所含有的阿仙药成分只是具有抗癌物质的其中一部分。并且这种阿仙药成分会合成一种叫做丹宁的物质。

这种物质是植物、果实中含有的成分,在日本以前叫“渋”,番茄当中的籽、皮及梗就是这种物质。丹宁非常容易氧化,如果和热水或空气接触就容易生成丹宁酸。而且这种丹宁酸具有使蛋白凝固的特性,所以我认为食物中所含有的这种丹宁酸,在一定程度上会损伤人体的胃黏膜。

临床当中,在用肠胃内视镜给经常喝含有丹宁酸的茶(绿茶、中国茶、咖啡、红茶、蕺菜茶、杜仲茶)的患者检查当中能够发现,他们的胃黏膜变薄而且出现萎缩状态。我们都知道如果慢性萎缩性胃炎继续发展下去的话就会导致胃癌。

所以,为了证明这个说法,在2003年9月,日本癌症学会的三重大学的西川正佑教授发表了一篇报告,所述内容是含有阿仙药成分的DNA具有危害作用。茶叶具有的危害作用还远不止这些,现在市场当中所销售的茶叶很大一部分在栽培的过程中都使用了农药。

含有丹宁酸的茶叶和残存的农药,还有咖啡因都对身体不利,所以,我们主张大家还是喝白水更好一点。

如果有人特别喜欢喝茶最好选择无农药栽培的茶叶,为了避免空腹时喝茶而伤害胃黏膜,所以尽量在饭后喝,一天2~3杯为宜。

之所以有那么多人盲目地相信这些错误的信息,我认为是因为现在的医学没有把人作为一个整体来对待,而人体内各部分都是紧密联系的。对身体某一个部分有利的东西并不一定对全身都有利。所谓“捡了芝麻,丢了西瓜”,就是这个意思。只看到物质中的一种成分,是不能贸然判断它是否对身体有利的。

吃肉与身体素质好坏无关

1977年,美国的参议院议员乔治马克发表了一篇关于生活健康饮食的报告,该报告以他的名字被命名为“马克报告”。在当时,美国的财政收入迫于连年增长的巨额医疗费用的压力,而美国政府也苦于找不到解决问题的办法。医学在进步可是每年患癌症和心脏病的人数却在不断增加,与此同时由国家所负担的医疗费用也在不断增加,已经到了威胁财政收入的地步,问题迫在眉睫急需解决。于是美国开始着力研究国民患病率高的原因和建立应急对策,美国全国开始受到疾病的威胁。正是来自这样的危机感,美国参议院设立了——营养问题特别委员会,由马克担任委员长。

当时,委员会的成员们收集了大量来自世界各地关于健康饮食的资料,并且和当时最权威的营养学家们一同研究和调查患病率增加的原因,最终完成了五千多字的“马克报告”。

这份报告指出了,在当今美国国民中存在着很多问题,并且得出一个结论,即国民的患病率之所以高,都是由日常不良的饮食生活习惯造成的。就是说美国国民如果不改掉错误的日常生活习惯,就无法遏止高患病率。

当时在美国,人们的主要食物就是牛排烤肉和高蛋白高脂肪的食物。蛋白质是构成体内物质最基本的物质,是人体不可缺少的重要的营养要素之一。所以,动物蛋白对于运动员和处于成长期的年轻人以及体弱多病的老年人来说都是必需的。日本人之所以认为多吃肉才有力量就是受美国当时的营养学的影响。

然而,“马克”报告几乎全盘否定了当时的饮食常识。那么什么才是理想的和健康的饮食方法呢?这还要追溯到日本的元禄时代。

元禄时代人们的日常饮食基本上以粗粮为主食,同时摄取少量的蔬菜、海藻类、动物蛋白和一些鱼类、贝类。现在日本的饮食习惯之所以被认为是健康的而被广泛关注的原因就在于此。

但是,如果说不吃肉的话肌肉就发育不良这纯属胡说。我们自己看看自然界就明白了。

就拿食肉动物的代表狮子来说,大家都会觉得狮子很强悍,身上一定都是健壮而发达的肌肉。其实,像马和鹿等食草动物身上也有强健的肌肉,这样才能保证它们在受到狮子和老虎的追捕时,可以长时间的奔跑。食肉动物的优势就是在于瞬间的爆发力和冲击力,速度决定着胜负。当然它们也知道自己在耐力方面比起以耐力和持久力著称的食草动物来说,要逊色得多。

不吃肉就长不高,这也是不科学的说法。大象和长颈鹿都比狮子和老虎大好几倍,可是它们都是食草动物。

不过,大量摄取动物蛋白可以使人类成长速度加快这倒是事实没错。最近小孩子们成长的速度快得惊人就是因为他们摄取了大量的动物蛋白。

在这里,过量的摄取动物蛋白也有不利的一面,那就是容易长过头,就是说生长过快会导致提前出现老化的征兆。

所以说,加速成长的动物类蛋白就是促进老化的肉类。

我们要提醒特别喜欢吃肉的朋友们,食用过量的肉类不仅有碍于健康,而且还会导致提前出现老化的征兆。

服用胃药会导致胃功能衰退

在人类的身体当中,只有在强酸的作用下才能完成正常生理机能的两个部位一个是胃,另一个就是女性的阴道。这两个部位都处在PH值为1.5~3之间的强酸环境下。之所以有这么强的酸,就是为了杀死入侵的霉菌。

在洗澡的时候或者过性生活的时候,霉菌很容易进入女性的阴道。所以为了杀死入侵的霉菌,在阴道里能够分泌具有乳酸菌性质的强酸物质。

而在胃里面也同样如此,大量的霉菌伴随着食物一同进入胃部。每次饭后大约有3000~4000亿的霉菌进入到胃部。数量如此庞大的霉菌在胃液强酸的作用下,大部分都被杀死了。

所以,就是为了保护人体这两个容易受到霉菌侵袭的部位才产生了大量的酸性物质。如果通过药物来抑制人体当中必需的、不可缺少的这种酸性物质的话,那么结果我们就可想而知了。大量的霉菌畅通无阻地进入到胃部之后,毒性强的霉菌还开始发挥作用,从而引起痢疾和各种肠胃疾病。

胃药对身体的伤害还远不止这些,如果胃酸被过度抑制,那么胃蛋白酶和盐酸就会分泌不足,从而难以激活消化酶,最终导致消化不良。如果胃酸分泌不足还会影响人体对铁、镁、钙等金属元素的吸收。做过胃溃疡和胃癌手术的患者多半会患有贫血,这就是因为胃被切除之后胃酸分泌严重不足所导致的。

而且胃酸被过度抑制会打乱肠道中的细菌平衡,降低人体免疫力。在人体的肠道中遍布着三百多种、上千亿的细菌。在这里,具有促进合成和消化功能的细菌被称作有益菌,也含有像威尔什菌那样的细菌被称作有害菌。但是数量最多的是一些中间派,既不是有益菌也不是有害菌的中性菌。这些细菌保持着肠道内的细菌平衡,如果哪一方细菌增多它们就向哪一方靠拢。所以,有益菌与有害菌之间是否平衡决定着肠道内部环境的好坏。

如果胃酸分泌不足,就难以激活消化酶,那么未完全消化的食物就会直接进入到肠道当中。这样一来,本来应该在肠内被消化的食物变成了难消化的食物,在肠道内积存起来。人体肠道内的温度接近37℃,相当于处在夏天炎热的环境当中。所以残存的食物就会腐烂、变质、异常发酵、产生有毒气体。这样的环境有利于有害菌大量增生和繁殖,最终导致身体免疫力下降。

这些都是因为在胃中没有被完全杀死的霉菌进入到肠道当中的结果。

所以,越吃胃药越伤身体。

那么,应该怎么办呢?答案很简单,就是要尽量避免服用胃药,在了解了真实情况之后,对症下药就能够解决问题了。

烧心是因为胃酸倒流进入食道造成的。因为本来食道属于碱性环境,是比较怕酸的部位。因此平常有人如果胃酸倒流的话会无意识的吞咽碱性的口水,来中和倒流的胃酸。如果是因为吃得过多消化不良所导致的胃酸倒流,不能被完全中和,就会灼伤食道形成溃疡。而如果胃酸继续增加的话,就如同往伤口上倒酒精一样,会产生疼痛以及烧心的感觉。服用胃药之后会感觉很舒服,那是因为抑制了胃酸的结果。

所以,为了防止烧心,就要尽量避免胃酸流入食道。要尽量避免暴饮暴食、吸烟、酗酒、过量饮用咖啡等等。还有更重要的一点就是晚饭最好在睡觉前4~5个小时吃,睡觉的时候最好保证空腹状态。

胃黏膜上有突起的小绒毛,胃酸就是由那里分泌出来的,如果长期服用胃药的话,会降低绒毛机能,使绒毛变短。导致黏膜萎缩、黏膜变薄,从而引起各种炎症形成萎缩性胃炎。胃酸分泌减少,容易孳生大量的幽门螺旋杆菌,这样就加剧了黏膜的恶化,最终演变成胃癌。

在日本90%的胃癌患者都被认为是感染了幽门螺旋杆菌,这种细菌能够潜藏在胃液和黏膜细胞中,正常分泌胃酸的人也容易感染。

而且幽门螺旋杆菌是通过口腔感染的,所以年龄越大越容易感染。50岁以上的日本人幽门螺旋杆菌的感染率达60%~70%。幽门螺旋杆菌的感染虽然不能直接导致癌症,但是为了避免它的增加,应尽量避免过多地服用抑制胃酸的胃药。

过量饮用牛奶易患骨质疏松症

第一次告诉我市面上销售的牛奶不利于身体健康的是我亲戚家的孩子们。那还是在35年前,那两个孩子从小在美国长大,在生下来六七个月的时候,都患了过敏性皮肤病。

孩子们的母亲经常带着他们到处求医,并按照医生的指示服用各种药物,在经过了长期的治疗之后,病情并没有得到缓解。孩子们到了三四岁他们又患了严重的痢疾,以至出现了便血的情况,于是这个母亲又找到了我,在用内视镜检查之后我告诉她孩子们患的是早期溃疡性大肠炎。

溃疡性大肠炎多由日常不良饮食习惯引起,我随即询问了有关孩子的日常饮食情况,终于弄清楚了孩子的病因,在孩子患过敏性皮肤病的时候,按照医生的指示,由母乳喂养改为用牛奶。得知这一情况后,我马上要求这位母亲立刻停止给孩子们食用牛奶和任何乳制品。不久以后,孩子们的痢疾和便血,还有过敏性皮肤病都得到了彻底治愈。

在这之后,我在对每一位患者所做的问卷调查当中加了“牛奶和乳制品的摄入量”这一条。经过临床研究结果表明牛奶和乳制品的摄入量过多容易导致过敏性体质。而且研究结果表明,处在怀孕期的母亲如果牛奶和乳制品的摄入量过多也容易导致胎儿产生过敏性体质。
